The 275/60/20’s are what the previous gen rams came with and would be the minimum in trying to fill the wheel wells. 265/65/20’s would give it a beefier look and will fit too.
The 6’4” bed was the primary reason I bought a Ram since so few manufacturers offer the longer beds In crew cab trucks. It’s only a ft but it offers me so much more room in the bed and I believe the ride is better with a longer wheelbase too.
Depends on the tire, there are 34” tires that weigh less than 55 lbs and there are 34” tires that weigh 67 lbs. The lighter tire in similar to stock diameter could improve your mpg by lowering your rpms at highway speeds.
