There's a difference between cold air, and comfortable air. It's an important one. For those of you who are sitting in the truck and remote starting it, what still feels like cold air will be "warm" enough to make a difference when defrosting the windshield and warming up the cabin without occupants. As soon as the engine starts, there is temperature change happening in the heating circuit that the blower motor moves air past. It may not be warm enough to feel comfortable when sitting in front of the vents, but it's warm enough to use for cabin warming.
Coolant temp should only need to be around 100° for the fans to start moving "comfortable" air throughout the cabin AFTER the remote start takeover happens and the truck thinks occupants are inside. Before that, any coolant temp higher than ambient temp will work. And just moving the cold air around in the truck is enough to de-fog the windshield and glass, regardless of temp.
