I installed Bilstein 5100s front and back this October. Ring #5 up front on non-ORG. Also added Motofab 1" spacer and Airlift 1000HD bags in rear. About 1500 miles on the setup and looks and drives great.
To the OP: I'd advise buying the UCAs from the Mopar lift kit. They are cheap and good...

You are lucky sir! Mine is a 2021 with only 3500 miles of mostly pavement. Hasn't even seen a winter yet. It was crazy how tight those ball joints were.
The drivers side ended up being just as tight as the passenger side, but I knew what to do after the initial struggle...straight to cutting...
I purchased 1" Motofab rear spacers to accommodate a Bilstein 5100 lift. I'm in process of installing the fronts but haven't got to the rears yet. Main reason for going with a bottom spacer was to leave room for manual airbags in the spring up top.

I had a 2014 Bighorn that I did exactly what you are planning with sound deadening in the doors and floor. It did make a noticeable difference in road noise. My new 2021 Laramie is so quiet I haven't felt the need to do sound deadening. Not sure how loud Nitto Grapplers are, but I have BFG KO2s...
We have almost the same truck but mine came with the 20" wheels. I added 275/60/R20 BFG KO2s, 1.5" Bora wheel spacers, Raptor 4" nerf bars, and a few other things that muscled it up. No lift yet but that's probably coming soon.

Ah OK. I was thrown off by the description of the rear bilstein at https://www.jackit.com/bil-24-233354.html supporting 0-1" lift. It doesn't have adjustments like the front ones, just supports an extra inch of lift from some other method. Thanks for bringing that up.
Did you end up installing a spacer in the rear with your Bilsteins? I just purchased a 2021 Laramie non-ORP and I'm looking to do a similar level/lift. I already purchased 5100s for the front but trying to figure out if I need to do 5100s in the rear or go with spacer only.
