When dealership fixes and replaces parts under warranty Am i allowed to request the broken part be given to me upon pickup?

They are not going back and nobody is studying anything. On the occasion that a part is actually replaced the old one gets trashed or turned in for a core if it's a rebuild part.
Most of the time, it just gets a squirt of WD-40, tightened up a bit and hey "you got a brand new motor, that's what took us 6 weeks to get your vehicle back to you. Make sure to bring it back in 500 miles so we can check to make sure everything is still in spec". Then they all watch the camera footage at lunch the next day screaming with laughter.
