I Pull a bass boat and sometimes a 12ft enclosed trailer with not much weight in it. Would the hurricane SO motor 1500 be fine for this or would I need to look at a HO?

The SO has higher payload and tow capacities than the HO. How much do your trailers weigh?

You’d be fine with the Pentastar V6, so any uplevel engine will just be that much better.

Towing with a turbocharged engine is a revelation; the Hurricane would make the task effortless.

Ain't that the truth.
I pulled 3500# with my Santa Cruz. That 2.5 turbocharged 4-cyl 'only' put out 311 ft/lbs and power was never an issue at any sane speed, even going up mountains.

When things get heavy it's all the other stuff that's important: brakes, suspension, frame, etc.

The Hurricane SO puts out more power than the 6.4L on the HD's.

Depending on configuration (4x4 vs 4x2, bed length, gears, etc) the Hurricane is rated for 8,500-11,500 lbs.
