Sounds like a software glitch. Scan to code to see what it says then clear it out. They are still working the bugs out of the new canbus architecturez and despite what people want to believe, putting the Hemi back in Rams isn't going to magically fix that.
You do realize the only difference between a 5w-20 and a 0w-20 is how well the oil flows when cold? They are both still 20 weight oils, so it's not "thinner".

Fwiw my truck, with 75k miles has a completely clean coolant dipstick. I have had to top off my reservoir once because it was low enough dipstick was dry.
I also still get the coolant smell on hot shut down from time to time.
Switch is part of the clock spring. So yes steering wheel has to come off. There is a recall for blinker switch not cancelling. Not sure if it applies to your issue.
You don't mention what you currently use for leveling kit. If it's puck spacers, ditch them and get the Bilstien 5100s. Better struts than OEM and you can dial in your level. They also make rear shocks

Take it to any local parts store and they can check the codes for you, so you will at least know what it is and if it is "safe$ to drive. I'd recommend buying a Bluetooth obd adapter to be able to check codes yourself going forward

Right to repair doesn't mean right to access to the source code. And also doesn't mean free access to diagnostics . As mentioned, you can purchase all the same equipment dealerships use. Nothing is stopping you from fixing your own vehicle.
Also, you desperately need to clean the corrosion off those OEM connectors. Then use some dialectric grease when you plug in new connectors. It's supposed to be weather proof style connectors but there was obviously some water intrusion causing the green corrosion
