I use WD-40 on an old sock (or any rag for that matter) to clean and polish them. I did the same thing on chrome and stainless tips on other cars for years. It cleans off the caked on dirt and tar, and leaves a protective coating as well.
The anti-spin really helps in any pickup truck driving in 2 wheel drive, especially in the rain. Try pulling out on a hill with an open rear and you will see what I am talking about. I never drove a truck with an E-locker so I can't comment on that.
Your interior is the black interior color. That is why you have the black headliner. The Diesel grey/ black interiors have much lighter upper door panels and seat inserts, along with the cream/tan headliner. You can see the headliner color on the windshield posts. Here is a photo of one.
The trucks I saw with the diesel grey/ black interiors had a sort of cream colored headliner. The trucks with all black interiors (which is still dark grey in my opinion) have a charcoal- almost black headliner.

Usually a 2500 is recommended for plowing. I have seen a lot of 1500's or SUV's like Ford Broncos wreck the transmissions from plowing. For light duty plowing like you are doing it would probably be OK, but the drivetrain isn't really strong enough for it.
