Recently got a gen 3 ecodiesel limited 3.92 4x4 with off-road package and I am getting an average of 20 mpg with 70 to 80 % highway driving. Also seems like a lot of turbo lag that then comes on hard. Seems low, not sure though. What's everyone else getting?

Go 45 mph and set your cruise. What do you get then? then up it by 5 mph increments and you'll find your sweet spot. getting 20 mpg in a fullsize truck going 75+mph is pretty impressive.
Keep your foot out of it and it will be better.
As far as lag, it't there and its the crap throtlle response. a Pedal Commander 78 sport -2 did the trick for me.

Averaging 20mpgs with 50% highway and 50% city - - only 650 miles so far. A lot of my highway miles are not flat, and a lot can be on an incline. So hard to judge. 4x4 Rebel 3.0L EcoDiesel.

10k miles, I drive 140 miles a day round trip to work almost all of it at 73 mph. I get 24 mpg every time. I have only drove it on 30 miles+ trips at 60 mph a few times and got 28 on those trips. I am getting 5000 miles out of tank of DEF. Just filled it for my 3rd time.

I have noticed that where I get my diesel affects mileage - try to stay with the Bp by my house at highway exit that sells a lot of diesel - generic/old fuel seems to affect mpg by 2 or 3
I have 5k miles on my truck
also found 2.5 gallons of def at o’rielys auto parts for $10.99 -better than $11 a gallon at dealer

truck stop near me is 2.89 a gallon at the pump for def

Mine is the same setup, 3.92 and offroad equipment. I have 275/55R20 tires from the factory. Seeing 21-22 MPG in mixed easy driving. Turbo/trans shifting lag is horrible. Powertrain calibration sucks, which is a shame because the hardware is awesome.

Best I've seen so far was 26 hwy till the winds hit then it dropped back down to 22 If I remember correctly.
In city driving I was averaging 19 which I thought it would done a lot better, was never really accelerating fast, cant anyways with the lag lol.
Now that I'm home and cruising the rural hwys at 60 mph she bounced off 25 a few times but cant get it over 25mpg atm.
I have a little over 6k on mine.

i got a 2019 1500 Classic 3.0 Eco diesel RWD with 392 rear end and with average 33 to 36mpg, i bought and installed a Box from DTE systems, and a pedal box for the truck, I love it!! i leave the 5.7 gas trucks in the dust at the red lights and not to mention all chevys gas and diesel trucks. the box is installed at the injectors and gives me 40 more HP and 52ft-lbs in torque.Its the best investment i have ever done. the pedal box is amazing, i can adjust settings as i drive or i can adjust it by an app on the phone,

I have a 2020 Laramie with all the options I could get, but went with the 3.21 rear versus the 3.92 and an LSD versus electronic locker - prefer the LSD (for slick roads at highway speeds - don't mud or rock climb anymore - as the traction control does not really kick in as fast as the LSD at speed unless it is mushy snow that the front tires have trouble with or issues with loosing the steering than it will kick in (had the same config LSD - in the last three trucks so a bit of experience using LSD and traction control with 6 months of winter 
) . I drive more than I tow and tow on average only about 3,000 lbs. Most driving 74 mph on freeway, rolling hills. I have been averaging around 27 - 28 mpg but only have 1500 miles on the truck so it still is probably early to tell what the MPG will average at. I usually wait until after the first oil change to to if things settle down and get that change at 5,000 miles. As for DEF, very little used since I bought the truck less than a month ago (same as my 2016 eco diesel), I would guess mainly due to 95% of my driving is freeway and for 1 1/2 hours on each trip - long commutes to work. The one tow already done on this truck (at 1,000 miles) resulted in a MPG of 23, averaging 65 mph on a state Hyw with a load of boulders in the trailer (around 2500 lbs with a 400 lb trailer).

Im at 24 - first tank and around 500 miles.

Finally ran through my first full tank of fuel, ran from topped off until the gas light came on. About 1200 miles total on the engine. 515 miles/23.75gal = 21.7mpg (computer said 22.1, so pretty close). The first 100 miles were highway (with two bikes on a hitch rack that I noticed were acting like a huge wind sail), the rest just driving country roads back and forth from my kid's school and around town. My Hemi Grand Cherokee averaged around 15-16mpg for this same activity. I am more than thrilled! Diesel fuel is cheaper than mid-grade gasoline here in Indiana, too ($2.15 today).
