I am hoping to have my truck by the end of the week, have it narrowed down to 6 or so.
Will be 5.7. Hemi, any feedback on the etorque? gotta worry about something that's unproven so not sure on 25Z or 27Z.

and I want the heated seats and steering wheel
It looks like I can get a crew cab BigHorn with under 30k miles for 32k or so.
any tips or warnings? things I should know? any options that are must haves?

Welcome , that would all depend on what you want / need . Remote start with the heated seats and wheel are really nice . I will say that I have the rainsense windshield wipers ( I thought it was just a gimmick ) but it is awesome , no more trying to get the right setting on pulse for whatever rain is falling . Etorque had some problems with early builds but seems to be pretty good now .
