How to rearrange Apps for Apple Car Play, and how to change default map?

Is there a way to rearrange the app icons on the screen? Also, when in the new view, with the map on the left and 3 other items on the right, is there a way to change which map it shows? It defaults to the Apple Map, which is the worst, I would much prefer to see Waze map or even Google Maps.

Rearranging the apps on the screen has to be done on the phone in the Settings menu. Prett East once you find it. The rest.....not sure.

According to this Reddit post, the splitscreen feature is Apple Maps only right now, until they decide to allow another app access to use it.
