I have a 2021 ram 1500 V6. When accelerating at highway speed the vehicle continues to rev after I let off the gas for an abnormal amount of time?

Also, when following a curve at highway speed the steering wheel seems to suck in the turn position. Freaked me out the first few times.

You don't say whether your suspension is stock, so...
1. Have your front suspension and steering system components inspected by a reputable shop.
2. Have your wheel alignment checked and corrected.
