Find a new mechanic, if he isn't in diag.net, iatn, or in pico, snap, topdon(many other web sites) he isn't investing in himself. Not to metion the many of groups on facebook. You shouldn't need to do his leg work. Pico had a library with 1000s of waveforms, same as autonerdz
When does it overheat? When driving, idling, idling with hood open?
Or is it a coolant consumption issue? If its not leaking externally it is burning it, leaking into engine oil, or leaking into the transmission fluid.
90 degree pick will be your friend. You can go under the connector and release the tab. 6 hours in and you are not out yet, tow it to a shop it should only take 1 hour or less
I don't know if it was me or not. There is a flat spot on the oil pan(iirc) that was used for a dipstick in pre-production engines. They should have left the dipstick tube. Many European cars have no dipsticks and have no issues, some people over reacting to change.
It's just a step of their process. A vibration diagnosis can be daunting, are you willing to pay for every step of the way? It can take many hours and trial and error sometimes.

Until Stellantis started to build them, the 850RE has issues, IIRC its the Stellantis version is the only one they allow internals to be repaired under warranty. I think ZF wont be building the trans soon for them, will be the Stellntis version only.
I would buy it and install. I don't think it needs to be programmed to the vehicle. If it does, the dealer will usually do it for 1hr labor or find a local shop/mobile programmer that can do it. My experience is Stellantis is one of the more expensive vehicles to program aftermarket
Yes the drain plug sealed up and did not leak. About 4qts on a drain and fill. You can get just drain plug replacement to ease any nerves you may have, part # 68174052AB
