Have you tried contacting Westin directly, their installation instructions state that the towing and weight capacity is noted on a sticker on the hitch itself. Seems silly that they wouldn't put it in the description though.
I have a Bighorn Night Edition, so my taillights were already a little darker than a non Night Edition. What I did do though is have my window tint guy wrap my 3rd brake light so it blended in and matched the rest of the lights.
He also said it took 11 (ELEVEN) days to get his truck back, hence $1100 for rental. But either way, I'm no vehicle Guru, but how would headers eliminate the Hemi tick?

Welcome, to answer your question, it depends on the assembly plant mostly. I ordered my truck in May of 2020 and was told 3 to 6 months but had it 53 days later.
I did a Bilstein 5100 series lift on my 2022 1500 2wd. It raised the back about an inch and the front about 4 inches. I haven't experienced any degrade in ride quality and am extremely happy with the look. Also it allowed me to run a 35x 12.50 x 20 on a 20x9 rim with a zero offset.
I'm going to say the rims won't work. Usually going down in size is not an option, let alone going from 22's to 18's. as you said brake caliper clearance is the issue.
