When my kids were small, I just used a large terry cloth bath towel. It protected the seat and also caught anything that was spilled or spit up. You can easily throw it in the washer every couple of weeks.

It gets really dim if your headlights come on when it isn't really dark out. I notice this especially when the wipers are on during the day. I have the setting turned on for lights on with wipers, so it is expected I guess.
