My 2021 had about 2.5 quarts in it from the factory and took about 2.75 quarts to fully fill back up when I changed the fluid. Anything less than full could cause premature wear I’m sure but losing any rear end component at that low of mileage is still disappointing. Though it’s not unheard of.
I've never had this issue with either of my Rams, but I had it with one of my Chevys. The electric solenoid/motor that shifts the gears in the transfer case had burned up. If my Ram gave me this issue, that's where I would start based on my past experience.

Is there a large tuning market for the Hemi? Perhaps a well known shop could do the gasser equivalent of a GDE tune for your Hemi to give you some safer and more reliable "pep in your truck's step?" Still hate to hear of a dead truck in the road situation like yours, and am very glad you handled...
I did both diffs at 30k and my transfer case at 60k, I'll be doing the diffs again probably around 80-100k. I think it's a good idea to take care of them as the fluid does break down, and to get any break in material out of those gear cases. Easy enough to DIY, though not sure what a dealer...
Does your truck have the off road package? If so they will fit no problem. No mods here and my truck clears 35 x 11s with no issues with factory off road package.
