I realized a while ago that I had not seen the 'eco' light come on anymore. Over the last month, I have kept an eye on it, and have not seen it come on once, not even on roads where it previously would.
I checked for OBDII fault codes, and there are none. No lights on dash. I does seem to idle a little lumpy as well.

Any suggestions on what could cause this?

First, double check to make sure the light wasn't switched off. Go back to settings and verify, you never know.

It not turning on could be the result of other issues, especially if it feels off at idle. I would take it to an independent shop that has the full factory level ODBII reader. They maybe able to shed more light there you will not be able to see with your reader.

I have noted a similar experience with my truck 48k miles with a regular 5.7 engine. No CEL and no obvious rough idle that I am able to detect. It appears to shift as expected. I have used only Top-tier gasoline in the truck since I have owned it, I got it Nused. Mostly Highway miles, driven gently since I have owned. I am faithful to oil changes and will soon do the drive train drain and fill based on the miles/age of the truck btw it's a 2020 as well.
Let us know what the mechanics determine and the solution.

Wanted to give an update: took it into the dealer (there still weren't any codes/lights).

Turned out cylinder 6 was misfiring. They replaced coil pack an d now I have a smooth running truck again.

And does it go into ECO mode again? Enquiring minds want to know.
It does, but that turned out to be a red herring: somehow light was switched off in settings as @SD Rebel suggested, so it was working the whole time probably. 🤦‍♂️

The lumpy idle, occasional clang at startup and jerky ride at low rpm turned out to be the true symptoms of what was going on. All of those synmptoms are gone now. Oh, and decreased mileage.

It's in the Uconnect Menu on your center media controls, in settings > display > (scroll down to) "fuel saver display in cluster".

BTW, this only turns out the ECO light, it doesn't shut off ECO mode.
