I would like to run 35/12.5/18 KO2s on my stock rims with a 2.5 level. I’ve seen mixed reviews as to if this is even possible. If anyone has done it, how close are the tires to the UCA, and do they rub? I was able to run 35s on my second gen with the same setup, hoping to do the same with my new one.

I don't see them clearing the UCAs without negative offset. I have -12mm offset and they are still fairly close.

Unless your heart is set on the 12.5" width, just run 285/75/18 tires. Same height, inch narrower, will work on Stock wheels with at least 1.5" level

So I ended up going for it, the 35x12.5x18s ended up fitting pretty well without spacers. Although it is extremely close to the UCA. No rubbing so far we ll see how it goes.
