Because the battery terminal is leaking gases from the battery. Pick up those felt battery terminal rings and install, that will at least control if not stop the corrosion.
Holy crap! That's got to be in the top 5 worst I've ever seen. Either a cat peed on it, or you've had a bad terminal seal leak. Long shot, maybe the system heavily overcharging the battery, forcing out boiled corrosives. This is a '19(?) and you've had to replace the battery already? Makes me wonder. Stating the obvious, you're going to need a new terminal and maybe a battery. I think I'd have the charging system checked. The felt washers help a little but won't cure a major acid leak.
Just noticed my brand new truck with 3500 miles has this, but brighter and bigger. Guess I oughta run it to the dealer and have them do some replacements.

"If you notice corrosion on your battery’s positive terminal, it’s a sign that your battery may be overcharging, which can be due to a faulty voltage regulator.
Corrosion that appears on the negative battery terminal is a symptom of undercharging."
