I have a 2019 RAM 1500 5.7 motor and 3.21 rear axle 4X4 which my buddies refer to a the "soccer mom truck" due to it's 4 auto transfer case. I was planning on visiting Utah staying on the easy to moderate trails listed by the park service but having no experience in off road for that area my RAM might no be competent. Many tell me to lift it and put 37inch tires on it and have the transfer case replaced. Any thoughts?

No need to replace the transfer case. I don't know what the trails are like, but probably don't "need" 37s. A lift and better off-road tires wiliukd help.
