Went camping this past weekend and after setting up camp, my rebel sat for 2 days since we didn't drive it at all while camping. on the day we ended up leaving, went to start it and it had trouble getting going. it puttered for a good 3 seconds before it actually started up and started acting normal. no check engine light either? we were up in elevation (about 8500ft) but would that be the reason for it having trouble starting? I've also noticed it idles right around 500rpm which seems really low to me?

Altitude could be a factor, as you'll be running off your original fuel trims and not what will get set at altitude. So it might be running too rich for a short while until the oxygen sensors start working.

Or maybe you have a weak check valve in the fuel pump and gas drained back while sitting and it took a few seconds to build pressure again.

Or you have a leaky injector or two, so you lost residual pressure and a couple cylinders were flooded. That'll give you slow starting and a lousy idle for a few seconds.

If you didn't set any codes and it cleared up on its own, I wouldn't worry.

I didn't see any codes pop up but maybe it stored some codes in the computer only the service center can pull up? it also idles slightly above 500rpm now since its happened and I've noticed a slight rumble you can feel while idling that I've never noticed before.
