Hurricane engine temp fluctuation.

I've noticed with my Hurricane S/O the engine operating temps can really fluctuate.
At highway speeds running the A/C it can run as high as 223 degrees then slowly drop to 198 then slowly creeps back up continuing this high/low cycle.

With my previous 5.7L the engine temps stayed around 208 degrees the S/O fluctuates 20+ degrees.

Has anyone else observed the temp fluctuation with their S/O or H/O?

I've paid attention to the temp gauge since this thermostat has been revised 5 times since the release of the 3.0L Hurricane and a known issue.
