Has anyone found out how to beat the speed restriction on air suspension?

Has anybody figured out how to keep their limited or other equipped models in off-road two mode? on the air suspension screen ram will deny going over 19 miles an hour in that mode as if lifted trucks exist

No, and it would be silly to do so.
Your truck is not aligned to drive on OR2 and you would destroy your tires at a minimum. You are also flexing the aigbags to their limit and the ride would be terrible.
You can add a lift to a truck with air suspension and get an alignment on the setting you will drive at.
You can also in theory manually adjust the height for each mode, so you could make normal be the same hight as OR2 if you measure the hight and input it to the bcm.
