Is it possible to cancel an order if I haven’t signed any paperwork and only out a $1k deposit with a credit card?

I don't know where you're from, but in British Columbia all vehicle related deposits are refundable by law unless a service was paid for (IE - transport for a vehicle from a different dealer, installation of accessories, etc.)

I was told my deposit was refundable. It was only "good faith" money.

I don't think it should be a problem as long as the truck hasn't started building yet. I think your dealership should not have any problems with canceling especially if you plan to get a different truck from them.
