Welcome,
If you haven't already, download the Owner's Manual here:

The truck only comes with a User's Guide... also if you put your vehicle info in your signature, it helps to provide better information. Also the search function on the upper right is incredibly useful in finding information.
In the UConnect under 'Display', select 'Fuel Saver Display', when MDS comes on, the ECO light will display. I can't get it to come on at anything over 50mph short of going down hill.
MPG generally sucks for the 3.92 gears... and if you have the ORG, it sucks just a little more. I suggest using Fuelly to track your fuel consumption as the computer can be off by several MPG. For some folks it is dead on... for others, not so much; you can see my average below. I had several tanks at 13mpg, I'm now at 6K miles and my average is now closer to 16mpg, but it will take Fuelly a bit a time to average that out.
The heavier the truck the worse your MPG will be, also, if you are using 87 Octane, FCA recommends 89 for 'Best Performance'. I recommend using TOP TIER GAS, brands can be found here:

I'm using 91 from COSTCO as it is cheaper than 89 anywhere else.
