Happy update, the dealer replaced the radio and it completely fixed my issue! Android auto connects immediately now and doesn't drop wireless connection.
It's sad I had to wait 10 months for a resolution to this, but I'm glad it's fixed.
Update: I went to a new dealer over the last few weeks to diagnose and they had alot of trouble figuring it out. When I picked up my truck they tried to blame it on my phone not being compatible. I asked them to take me to a new RAM with uconnect 5 and we could try wirelesly pairing to that...
Ok, I tried the factory reset and it is still doing the same thing. I have another RAM close by and maybe I will bring it to them. I am wondering if it's a default Bluetooth in my vehicle.
I did try deleting and reconnecting the phone. I also tried pairing my wife's S22 Ultra and she had the same issues.
The other thing I have not tried is a factory reset, but I wasn't sure if there were any drawbacks to doing that.

When I start the vehicle, it usually takes 30 seconds for it to establish a connection and hold it for a random duration of time...
