I've experienced the screen jumping like that after a update before and it resolved itself about 24 hours later and has not returned. I do not have the CarPlay connection issues you are experiencing though.

IOS26 dev beta 5 came out today so hopefully IO26 public beta 2 should come out in a day or two and will hopefully will fix this. If not you can try the split screen CarPlay by pressing home on the uconnect screen and using the + button to add a split screen with CarPlay to adjust the settings...

Yes you are correct, but you can't do that from the truck screen as it is. You have set it to split screen to get access to the settings or have access to another carplay vehicle that isn't broken. I was only trying to give assistance on how to get to that setting in the video.
