They only send out a short signal every so often, and only when the tire is rotating. If they were on constantly, the small battery in the sensor would be dead in no time at all. What you saw was perfectly normal.
I see it has the infamous tow mirrors. You lose features like power fold , heated glass and cameras depending on the model. Check some of the threads on here about the tow mirror issues before you buy. My dealer still has a bunch of new 2019's with tow mirrors that were on the lot a year ago...
I think it depends on whether or not you have the active air dam. Trucks with the air suspension have a fixed front air dam. My Bighorn has the style you show in the first photo, with the "humps".
When my kids were small, I just used a large terry cloth bath towel. It protected the seat and also caught anything that was spilled or spit up. You can easily throw it in the washer every couple of weeks.
