It's been awhile since your post, but I would guess your new tires weigh significantly more than the old ones. You wouldn't think an extra 5-7 lbs per tire would make a difference, but it does. Also the rolling resistance can make a difference as well.

Yeah I know the debate on the fluids. I won't rehash that now. As far as the pan, I believe it should be the same. I've replaced the pan/filter on a BMW with a ZF 8HP transmission before and will make sure to match the old and new before proceeding.

Your truck is doing exactly what is designed to do. When moving, the air moving across the raditor cools it. When at idle, the fan has to pull air across the radator.
