Check the payload on the truck you’re interested in. You will run out of payload long before you run out of towing power. Depending on the options, you’re 1500 could have upwards of 2000lbs (barebones truck) of payload vs as little as 1000lbs (fully loaded).
You usually won’t start seeing problems till it stays below -40ish for a few days. I would definitely expect any newer vehicle to start without issues at the temperatures the OP is mentioning.
Brand loyalty is a big part of Fords success.
Dodge’s reputation due to previous generations reliability issues also plays a part even if they’re no longer true with the current Ram lineups.

The value of ICE vehicles will not drop in 5-7 years because of EV. Maybe in 15-20 years. And if you hold onto them long enough, they’ll go back up in value because of their rarity.
I bought my truck almost a year ago now but I have zero concerns about EV sinking the value of it anytime soon.

Might want to wait a bit and look for a used ‘20 if E-Torque is required. It has become increasingly more common the more 5th gens that are built. A lot of ‘19s did not come with it.
Mikeru already covered it but the Limiteds come standard with the 26 gal. Lower trims come standard with 23 gal.
I have a 26 gal on my Limited, kinda wish I had the 33 but I can live with the 26.
Considering in your OP you mentioned the used trucks you were looking at were around 38k, I’d say it sounds like a pretty good deal. If it’s got everything you want and a clean carfax I’d say go ahead and pull the trigger.
It’s a really nice feature. I didn’t think I would use it on my limited much but I actually use quite a bit, both on the Hwy and in city.
The only complaint I have with it is it can slow down so smoothly you don’t even notice so if you’re not paying attention you can get stuck behind slow moving...
