    I found that when trying to back up with the door open, after it puts itself into park and sets the parking brake, I can hit the parking brake release twice and it will override the system and allow me to back up with the door open.

    On the older vehicles I'm familiar with, yes I would expect the steering to hit against both steering stops. I haven't taken delivery of my truck yet and haven't been under any of the newer trucks to see how they are set up.

    This should be the issue that you tell them about - the difference in the ability to turn in tight spots between left and right. That's obviously a mechanical problem that they should be able to document and diagnose. Being a former tech there can be mis-communication between the service writer...

    I'd suggest measuring the turning radius with the wheel turned to the right and if it doesn't meet the specs for the truck then you have a problem that they can document and fix.

    MF tailgate as an add-on later? Is it swappable?

    The strikers that are built into the bottom of the bed that hold the two halves in the closed position is probably the biggest reason that you'd have to replace the bed. Those aren't something that can be bolted on.
