Results are in. I ended up going a little further after the airport down into Anaheim before filling up and checking. A few things noticed, going thru the grape vine I stayed between 65-74mph and was around 10-12mpg. Lie-o-meter showed 20.3mpg and hand calculated came out to be 19.8mpg. Only .5...

I always like a 20-25% margin between utilization and capacity, so even with a rating of 11,500 (my truck, with eTorque, has a 11,250lb tow capacity, according to RAM), I wouldn't go much past 8,500lbs. FWIW...
If you have the capability/accessibility to remove a wheel, get a measurement of a wheel stud and you'll know for sure the exact minimum length you would need for 0 modification (i.e trimming studs). Also customoffsets.com has a list within there wheel spacer section stating what the "normal"...

Same if not slightly better then stock. I’ve always lifted my trucks so I’ve been used to a worse ride after mods. But I love the lowered level on this truck. I’m also happy to say that I’ve experienced a slight bump in mpg on the lieometer during normal cruising.

I would think factory wheels and tires, even 22s, because of the positive offset being so tucked would be fine. The factory 22s are 9.5” wide I believe.
