The CAT back or more accurately resonator back will sound better. For a true cat back you need to buy Corsa's resonator delete pipe(this will make the system louder). I'm very happy with my Corsa Sport on my 2020 Ram.

OP, you will be fine changing octane. There is a long term knock table in the ECU that may take some time to adjust when you go back up in octane. Defiantly run higher grades when towing or running the engine hard.

It always floors me when people say they have heard knock. I've seen it on data logs and heard it in old cars I used to have but never on anything newer.
Makes me wonder if the knock sensor is bad or the problem has gotten so bad it's beyone the ability of the knock sensors to retard it out.
So far I've been optimizing the base spark tables and the WOT spark tables. Pretty sure I've gained 1 or 2 mpg highway. Not enough mods to worry about fueling.

All actual tuners will require an unlocked ECM. There are some piggyback "tuners" that modify the signal going to the locked ECM. No doubt there is less options with that setup.
Yes OP it will be fine to run like that. The throttle body is the only thing that might affect the tune. And that's a might.
Most likely the bigger TB will only affect how sensitive the throttle is. Doubt your getting any real power gain from it.
