How long does it take for the defroster to take care of the condensation? Also do you have big water droplets or just a light fog? When my windshield is fogged up, it usually goes away in a few minutes.

Yeah mine isn't like that and also not very noticeable when the radio is on. Only if the radio is off do I notice it. This truck makes all kinds of weird noises. Not sure if they are "bad" noises or just the nature of the beast.
I hear a weird sound too when the a/c is on. It's not terribly loud, but i notice it if I don't have the radio on. Almost sounds like the fluid in the lines moving through the pressurized lines? Hard to explain the sound.

Seems normal to me if you have the AC on, especially when it is really humid out. Your windshield is a lot colder than the outside causing it to condensate. It's basically what happens when you have a cold can of beer outside (or even in the house). The outside of the can condensates.
