That will really depends on what setup you have or will have, and what are you doing with the truck. lifted less than 2" you don't even need them, they're beneficial from 2-3" front lift, then you have street only, offroad slow pace which is what everyone with a set of 5100's or Eibachs will do...
You should be able to adjust the collar for 2.5" lift yes, but you'll have to take them off the truck and compress the spring to do so.

Make it a habit to ask for your alignment sheet, you want to see a before and after in it. Also keep an eye on your tire wear in all 4 tires (5 if you have a matching spare and do 5 tire rotations), don't wait 15k miles to look and spot an issue.

Did you do the Mopar kit already ? I beleive it comes with 2" rear spacers correct ?
Did you do a before an after measurement with the extra 500lbs ?
You can do Icons 1.5 springs and keep your 2" spacers, or you can do Clayton 2.5 springs and remove the 2" spacers

4th gen Coils will fit so that won't be the problem. Icons 1.5" are 4th gen coils and fit like a glove in the 5th gen. But you wont get 1.5" rear lift if you already had ORP/ORG springs. Icon claims you should see 1/2" more than ORP because they claim their spring rate is a little higher...
That's 300lbs tongue? That's almost a full inch down on stock springs. Put the airbag 1000 kit as suggested in the back and keep them pumped at 5psi when not loaded . They should keep the butt up where is at right now with your boat hitched up to the back of the truck at about 30-35psi.
Philip, can you post your ground to fender measurements before and after? Interested on the rear ones more with the Icon springs. You can remove the rear 1/2 spacer (where did you get that one?) and do a 1.5 rear spacer.
