Just make sure you check the payload sticker on the door. My limited sticker is 1579, I have seen some in the 1300s all loaded up. Would be difficult to reach 10k I would think.
I was looking at trying to do similar, a Laramie that was basically a limited. You will lose the vented rear seats but I think that’s all if I recall. The rest of the options can be added in.

Remember if you have a 10k trailer with a 1200 payload, the tongue weight (1k) and yourself (rounding to 200 lbs) means you cannot have any other passenger or gear in the truck. Sounds like it’s time for a 2500.

This!!! I hate when sales people just tell you what you want to hear. I generally try to test the salesman with an incorrect statement to see if they will correct me. That's how I know if I can trust them.
You mentioned softer suspension than you are used to. What are you used to towing with? Do you find the air suspension too soft when towing? Whats the tongue weight on your trailer and whats your payload? I would think you are getting very close to the payload ratings if you are putting 1300 ish...
