Interesting. I had Discount Tire put a new tire on my spare and they didn't hesitate. No ORG, no airbags, etc. Unfortunately I was not able to fit a matching tire under there, but got the largest tire we could make fit without modifications.
I have the MotoFab 3" front/2" rear level spacers on mine and have the Airlift 1000HD helper bags. They work great. The spacers don't change the length of the springs at all so it doesn't affect the use of the helper bags. Hope this helps.
I decided to get the Pittsburg 3 ton long reach floor jack from Harbor Freight and a pair of 6 ton Big Red Torin jack stands from Amazon. They don't see a lot of use, but do a great jog when needed. Got the jack on sale so total cost was <$200.

The simple answer is likely yes, changing tire size can affect the speedometer and Odometer, though I am not sure it would affect traction control and such. I don't think the lift will affect any of these, but it might affect things like the auto high beams, and possibly adaptive cruise control...
I love all of the options on my Laramie, but sometimes wish I had gone with something more basic. This is my daily driver, but was purchased to haul our TT. Having the extra payload of the Tradesman would be a nice benefit!
All I can add is that I have 295/65 R20's on my '21 Laramie WITH a 3" front/2" rear lift/level, and I still had rubbing in the front @ full lock. I had to remove the front mud flaps and secure the wheel well liner to stop the rubbing. I think you may be alright though. You are looking at a...
Look at the Yokohama Geolandar A/T G015's. They have a more aggressive look, but not as "Knobby" as other A/T tires. They are very quiet and 3 peaks rated, so they will perform quite well in the snow.

Thanks for the tip! It is still a bit early to be certain this fixed it, but it did not disconnect at all on my drive home this evening. An improvement for sure, and hopefully a fix.
I would think 35's would work well. I have a 3" lift and had the tiniest bit of rubbing @ full lock with my 295/65r20 tires. That extra 0.5" lift may well be enough to completely eliminate any issues.
I still don't have mine working correctly again after the latest update. It will disconnect when the truck turns off now, but it will also randomly disconnect while driving. It happened 3 time during my drive to work this morning. It is really irritating!!!
