You probably have a bad o2 or bad connection to the o2. Cels only really come on if you don’t plug them back in or have lack of catalyst (ie: remove cats and the sensor is post cat.

Sounds like you have never met the conditions above then. I have experienced the fuel level thing many times as well as the cel once. It’s a thing, life isn’t always full of perfect scenarios.
