Can't get those mirrors for our 1500s no.
2025 1500s can get them but from what I've read it won't be easy to put them on 2024s and earlier like the previous tow mirrors.
I think once the parts are released for the 2025's we will see a way to add those towing mirrors to the 1500s. The newer HD style mirrors are now an option for the 25 1500s. To my eye sheet metal and hopefully mounting points will be the same. As always it'll be up to wiring and possible door...

Unless your Jeep is a 2024 (Wrangler) you've got UC4 and if you want to update the in dash Navigation yeah it'll cost $169. UC5 Maps are free to update. You can download them from the Stellantis website. I think the subscription they try to get people with is to enable the over the air update...
To answer your question you won't lose any options except maybe passenger auto dim. You need to get the right towing mirrors for your swap.
I swapped from regular mirrors to towing on my 21 and will be doing the same again on my 23.
Jimmy will know for sure but from what I can tell the left and right image of the surround view may be off a little bit because the cameras are in slightly different locations.

I have a feeling it's because that was an older platform controlled by a separate navigation company. More over I feel like it's their way of pushing people into new trucks using UC5 that has better support.
I think the point here is it's a sealed system to a point.
If there is an issue it has the ability to pull air from the outside there by becoming unsealed. Generally if it does this you may have an issue. That whooshing noise is definitely a blow off valve of some sort.

The system is able to vent externally. On 4th Gens there was a vent tube with a filter behind the passenger side tail light. On the 5th Gens I think it's in the same place.

You're correct about the difference from UC5 to UC4. That being said the update issue is the same. I had an update stall out and the only fix was to download it onto a USB and do it manually. That sounds like what needs to happen here. I don't have a source for the UC4 latest software update.
I didn't have the entire radio giving that issue but it was limited to the navigation. For me I had to download the navigation software onto a USB and force the update. Once it took everything was fine.
I don't know if you're able but I have to do a factory reset before I played with the usb.
