Sense in the way you are looking at it doesn't come in to play on this. Trust me that it is all about money for the manufacturer. If it cost them more to do it this way they would 100% not do it. This option makes them the most money. They have enough bean counters to back that up.
Most manufacturers are going this route. Removing that copper wire and connectors saves them a ton over the lifecycle of a model type. Then they can also charge people extra for it as an add-on kit.

Your dealer has no idea what they are talking about. Aftermarket units can't be sales coded in to the truck and have on screen access.
The factory model is the only one that can be integrated. Dealer would have to input the sales code or you can do it yourself with AlfaOBD.

Ram recommends not using a hammer or sledge on the shackle to separate it from the ball joint as they can oblong the joint hole and the torque setting for the ball joints isn't enough to round it back out.

Every item you listed can be done afterwards. You will need AlfaOBD to set up the integration for the power steps. They will work with door open and close, but you won't have the option menus, soft key, or cluster notifications until activated in AlfaOBD or pay the dealership to do it.
