You can get by without one, usually, if you know how to drive in snow and have good tires. I prefer to have one (or the e-locker) to give you some extra options/convenience in the white stuff and mud, and wouldn't buy a truck without one myself, but its not the end of the world.

Does UConnect 5 have a listener profile setup, similar to the UConnect 4 units? Many UConnect 4 units would do that (especially the 12" ones) until a "listener profile" was created under the SiriusXM settings.
Correct. For a traditional funnel/oil change, you need to pop just the top off, which does not even involve a tool.
If you have a really bendy funnel, you don't even need to do that. (I have yet to explore this option, as popping the top/lid off is super easy.)
I like mine for many reasons, but bang-for-the-buck is not one of them. If you are looking for a good power-gain/positive-effects to $ ratio, this is not an efficient upgrade, especially if you already have a larger filter (like the S&B).

Give it a day and a couple on/off cycles. Mine did the same thing when I unplugged the rear wiring harness (with battery disconnected). It came back after about 24 hours or so and one or two cycles.
If that doesn't help, then yes, dealership unfortunately.

The 4th gen Rams had some reported issues with it, especially early in its introduction. They were far from widespread, but not unheard of. That's why I got my 2014 Longhorn without it (but pretty much every other option). As others have stated, these 5th gens seem to have a more robust system...
I'd reinstall the halogen headlights, and see if the issues all go away. I know it sounds weird that headlights would cause taillight issues, but when wires connect where they aren't supposed to, it can cause issues everywhere.
If the issues go away, then I'd reach out to Morimoto, or wherever...
They may release one more in another year or two, as its definitely a cash grab. But I can see your point too, FCA tends to provide little support once the systems get a few years on them.
Nice work, looks factory. I went the Dethloff route myself to give some protection in that area, and no removal for oil changes (has a little hole in the right spot). How much does this part cost?
I have the Dethloff, and it complements the factory skids nicely. It is heavy; without a lift, I had an interesting time installing it by myself. So far, no complaints.
Forgive me if this is a dumb question. I know the map update itself has this, its always had some method of making sure you cannot reuse it/resell it.

Sounds to me like you need to find a different dealership, to be honest. There are, unfortunately, a fair share of bad ones out there, or ones that will have a great sales department, but terrible service department, or vice versa.
