Quick update, I think my issue is cell coverage, before this device I used the WIFi hotspot in the truck, now of course, the WiFi is to the CarPlay2. I need to drive through more areas but so far the skipping seems to occur closer to my house and in the general same areas.
Yup, turned it down on the volume knob of the trucks stereo system, "0" and it can't hear anything, "1" and it blasts way too loud........only when connected via Bluetooth, CarPlay and the volume is fine.
I use an iPhone 8+ and even on the lowest volume setting "1", texts blast me out if connected via BT. I just always plugged in my phone until I bought the wireless CarPlay2 adapter.

I replaced all of mine with the Kenwood kit, 2 6x9 mid-bass woofers, 2 3.5' 2-way dash speakers and then Kenwood Excelon 6x9 2-way rear door speakers. Added a JBL 8" powered sub and a Kicker key-amp......pure bliss for my listening habits, mostly Rock and Blues Rock.
Good ceramic coat and then a monthly unlimited wash plan at a "soft-touch", trucks looks great.
I do quick detail the paint, every 2 months, with "Ceramic" spray on from the shop that did the original coating.
On my last car- a Genesis G80 Sport 3.3l Twin Turbo (which got totaled by an idiot 3...
