My guess is MFT is becoming a bit of a problem for FCA. First, it requires RamBox to have adequate bed sidewall strength to handle the MFT weight. Otherwise, they add an awkward brace with is an additional cost to them.
And they are having a problem with either the production or cost of the bed...
Interestingly, the Jeep off-road forums have similar discussions. There, the discussion is about how strong an axle assembly they need (like an HD pickup, they have live axles front and rear) and how much lift they need for a specific tire size.

If you subtract 1324 from 7100 it shows a weight of 5776. 5960-222-20+120 (the payload is calculated from curb weight, which includes a full tank) the result is 5838. Maybe it was 3/4 tank and not half? The 62# difference is about 10 gallons of gas.
There are also aluminum recovery hitches, some designed for soft shackles. it is also possible to just run a soft shackle directly on the pin without a hitch.
As a sidebar, there are also aluminum wheels that use a soft shackle and replace a snatch block.

Ultimately, payload and rear axle capacity (a misnomer, it is really rear spring and tire capacity) are the limiting factors. In turn, that reflects not only payload but what the actual net tongue weight is after a WD hitch is adjusted.
How far did the 35x12.5 tires stick out with zero offset? Do you have a straight front/back picture off the side?
Did you need anything beyond the initial lift (my guess is 2" would be enough) to clear the 35x12.50 tires? You don't have rock sliders, is breakover height an issue? In the BDS...

Proper inflation depends on the circumstances. Towing 10k trailer down the interstate, tires may be close to max. Driving over sand, through a stream, over rocks, pressure can be a lot less and peak performance will be at the lower pressure.
