Interesting - I've only ever towed with a 7 pin, so I've always enjoyed it turning off the sensors and tracking mileage for me. I would have assumed something was broken if I went to pull a UHaul or something similar 😅
Take a picture of what you're referring to. The connector is next to the license plate.. If nothing is wired to the connector on the bumper, yeah, factory missed a step.

The rating of the trucks takes all of that into account, so it's not like those components aren't capable - it's just a matter of whether the trailer is ideal for the truck's intended use. It's not like they rate the engine and glue everything around it; the cooling system, suspension system...

A 1500 will do it, but a 2500 will do it much better. If you're serious about "a lot" of traveling, I would definitely go with a 2500 that's made to haul every day
Panoramic roof yes, air suspension no. That's the biggest differentiator that Ram has (IMO) - F150 is made of aluminum and has loads of torque, so it has incredible towing/ payload numbers... but it's sitting on leaf springs from Ben Hur's chariot.

You answered your own question. Their hitch weight looks to be ~10% of the unloaded weight. How you load the trailer and where will obviously impact the actual tongue weight.
