What's involved in converting a manual temp control to auto temp control ? Is it as simple as adding a new sund&shade detector, cabin temp sensor and programming?

Yes. But you need a harness for the temp sensor. Mounts under driver kickpanel, needs pinned to the hvac module under the passenger kick panel.
Dual zone wont work, you’ll have internal codes thst the dealer can see but just keep it on “sync” and you wont notice anything.
