Does anyone know of a way to disable, or at least raise the top speed limiter considerably on the 2025 Ram 1500 SST S/O?

Sorry not until Atlantis High architecture can be altered with Alfaobd.

i emailed zauto yesterday about if they are working on getting tazer and nolimitz for the 25's. They said yes but no ETA

HOW DOES ONE GO ABOUT CHANGING LIMITER ON PRIOR YEARS?
AlphaObd can alter it for model years prior to 2025. The factory enables the limit based on the vehicle purpose and tire type/speed rating.
For instance the TRX is 118mph with my 3 vehicles the 2025 Rebel is 104 mph, 2024 Wrangler Rubicon is 93 mph and the 2021 Scat Pack Challenger doesn't have one.

104 seems fast enough. But I'd still like to take the limitation off. What if you need to get away from someone in some sort or emergency situation?

why would anyone want to have a over 5K truck to go faster
race cars want to weigh less than 2k
For me, that's not the point on how fast a heavy truck will run out. I bought my truck, and Chrysler has no right to put a limit on my truck without my permission. If I want to run 120 mph, I should be able too if I want to, not what someone who took my money and dictate to me what my speed limit is. It's just fact to know they did it. My Hell-cat is registered for 200MPH, it's rated to go 217 mph. Will it do it? I don't know and never will. Will it run 140 MPH everywhere I go on open roads? No, but it will do 140 on an open road if I want to. No different from Chrysler telling you can't roll all 4 windows down at 80MPH, and you're locked from doing it!. Do I want to? No. But If I want to, I should be able to roll 'em down to go 80mph!

I changed it with AlfaOBD using mph instead of km and it locked codes in the BCM and couldn't exceed 67 mph and Cruise was limited to 55mph. Dealer couldn't correct any of it. Only fix was a new BCM. Was probably all my fault for using mph numbers rather than the required km. Just a word of caution.

Before you consider top speeds, consider your tires. Most likely not rated for much more than 120mph. The 105 limiter is probably more about the T rated tires.
