Completely agree. My trailer is only ~5k pounds, but I wouldn't dream of not using a wdh. I'm also a big proponent of properly inflated tires, and traveling the speed limit (or less). Sadly, many folks don't, and they're often the ones on the side of the road with blowouts.
I agree on the bags. They're good but can only do so much. And I found that they were kinda fighting me with the camper and wdh. I went round and round trying to find the perfect combination of settings. Now I don't use the bags with the wdh unless I just need a couple pounds to firm things...
I did the same after my level, but I went with a 1.5 rear for towing my camper. Completely empty, before the rear spacer, it looked level (or maybe borderline nose high, to me anyway), but when I pulled the camper, it looked awful. I don't mind a touch of rake either.
Completely understand. And honestly with just the 4 of us, we don't really use the 3rd row much. We use it more for the cargo room (seats folded down). The only thing I really don't love about it, is with the third row up and being used, the cargo space is smaller than some car trunks ha.

Shouldn't have a negative affect. I have the same muffler and haven't noticed a negative. Other than I live in the salt belt and the muffler isn't holding up to the elements. Whatever is next will be something stainless.
